Cooking for two: Braised Halibut with Middle Eastern Spices

2 servings

2 teaspoons oil
1 medium shallot, peeled and finely chopped
1 small clove garlic, peeled and minced
1 (8-ounce) can tomato sauce
2 teaspoons honey
½ teaspoon ground cumin
½ teaspoon cinnamon
1/8 teaspoon cayenne pepper
2/3 pound halibut fillet
1 cup water
¼ teaspoon salt
½ cup couscous

1. In a large skillet heat the oil over medium heat. Add the shallot and garlic; sauté 2 minutes. Add the tomato sauce, honey, cumin, cinnamon and cayenne. Bring to a boil.

2. Add the halibut to the skillet, spooning some of the sauce over the fish. Cover the pan and reduce the heat to medium-low. Cook 12 minutes per inch of thickness, or until the fish is cooked through.

3. In a small saucepan bring the water, salt and couscous to a boil. When at a high boil, cover and remove from the heat. Set aside 5 minutes. Fluff with a fork before serving.

4. Serve the halibut and sauce with the couscous to the side.
