Recipe: Mignonette Pepper

Makes about 1/3 cup

- 2 tablespoons black peppercorns
- 2 tablespoons white peppercorns
- 1 tablespoon allspice berries
- 1 tablespoon coriander seeds

Combine the spices together and transfer to a pepper mill for everyday use.

Note: This mix is much better at rounding out peppercorn flavor profiles than the mixed colored peppercorn blends. And you gain sweetness from the allspice and tartness from the coriander.
