Quick recipe: Honey-Mustard Broiled Rockfish

4 servings

- 1 tablespoon light mayonnaise
- 1 tablespoon lime juice
- 2 teaspoons honey
- 2 teaspoons Dijon mustard
- 1 teaspoon dried dill weed
- 1 1/3 pounds rockfish fillets
- 1/8 teaspoon salt
- Freshly ground black pepper to taste
- 1/3 cup Japanese panko bread crumbs (or fine dry bread crumbs)
- 2 teaspoons vegetable oil
- Lemon or lime wedges

1. Combine mayonnaise, lime juice, honey, mustard and dill. Spread over the top of the fish and place on a broiling pan.

2. Sprinkle fish lightly with salt and pepper. Pat bread crumbs on top of the fish and sprinkle with the oil.

3. Broil about 5 inches from the heat source under a hot broiler, 12 minutes per inch of thickness, or until the fish tests done. The fish can be served with lemon or lime wedges.

Note: Panko bread crumbs can be found in the Asian food section of major supermarkets.
