Recipe: Tempura Mahi Mahi

Tempura Mahi Mahi
Serves 4

Mahi mahi, the great game fish of Hawaii, is cooked in every conceivable manner, most often over an open flame. One of our favorite versions turned up between hamburger buns at a fast-food restaurant called Pee Wee's Drive-in. It was irresistible, and reproducing it at home proved fairly easy.

Oil or shortening for frying
2 pounds mahi mahi, cut into 4-ounce portions
Salt and pepper
Tempura batter (recipe follows)
Soy sauce

In a deep kettle, heat oil or shortening to 360 degrees, or until a cube of bread dropped in will float immediately to the top and begin to brown. Dip salt-and-peppered mahi mahi fillets into tempura batter and fry, two at a time, for 6 to 7 minutes or until well browned. Drain on brown paper and hold in a warm oven. Serve with soy sauce.

Tempura Batter
About 3 cups

1 egg
2 cups water
2 cups flour
1 teaspoon baking powder
1 teaspoon salt

Note: The wet and dry ingredients can be prepared ahead, then combined just before using them.

In a small bowl, whisk together egg and water. In a separate bowl, combine flour, baking powder and salt.

When ready to cook, add flour mixture all at once to egg mixture and stir until well combined.
