Light Recipe -- Tuna Salad Sandwich With Jalapeno-Lime Mayonnaise

TUNA SALAD SANDWICH WITH JALAPENO-LIME MAYONNAISE 5 sandwiches

1 (12-ounce) can water-packed tuna

3/4 cup low-fat mayonnaise

1 jalapeno pepper, stemmed, seeded and minced

1 green onion, minced

2 tablespoons minced parsley or 1 tablespoon minced cilantro

1/4 teaspoon chili powder

1 1/2 tablespoons lime juice

1 plum tomato, seeded and diced

10 slices whole-wheat bread

5 crisp lettuce leaves

1. Drain the tuna well while preparing the mayonnaise.

2. Stir together the mayonnaise, jalapeno, green onion, parsley, chili powder and lime juice. Set aside 1/3 cup. Add the diced tomato to the original batch. Combine with the drained tuna.

3. Spread all bread slices thinly with reserved mayonnaise. Spread 5 slices with tuna salad and top with a lettuce leaf. Replace tops, cut in halves and serve.
