Quick Recipe -- Lemon-Sesame Rice
4 servings
1 cup long-grain white rice
2 cups chicken broth or water
Finely grated peel of 1 lemon
1/4 cup finely chopped green onion
1/2 teaspoon salt
1 tablespoon fresh lemon juice
2 teaspoons sesame oil
2 teaspoons sesame seeds
1. Combine the rice, broth or water, lemon peel, green onion and salt in a medium pan. Bring to a boil and continue boiling until the level of the liquid just covers the rice. Turn the heat to low, cover and cook 15 minutes.
2. Remove the pan from the heat and stir in the lemon juice, sesame oil and sesame seeds. Set aside 5 minutes before serving.
