GRITS AND SAUSAGE SCRAPPLE 6 servings

2 1/2 cups water

2/3 cup uncooked grits

1 roll (12 ounces) sausage, any flavor

1/4 cup flour

2 tablespoons shortening

3/4 cup maple syrup

1. In heavy saucepan, bring water to boil. Slowly whisk in grits. Lower heat, cook and stir for 5 minutes. Remove from heat. Cover and set aside.

2. In heavy frying pan, crumble and brown sausage until pink disappears and sausage is cooked through. Drain fat.

3. Combine grits and sausage and pack into 6 3/4-by-3 1/2 inch loaf pan. Cover and chill overnight.

4. Remove from loaf pan and slice into 12 slices. Dust lightly with flour.

5. Melt 2 tablespoons shortening in a heavy skillet; brown scrapple slices over medium-low heat 10 minutes on each side. Serve with maple syrup.
