Italian-Style Shrimp with Lemon and Garlic

4 servings (serving size: 3 ounces shrimp and 1 cup pasta)-preparation time: 25 minutes; cooking time: 5 minutes

2 teaspoons dried Italian seasoning

2 teaspoons Hungarian sweet paprika

2 teaspoons grated lemon rind

1/2 teaspoon salt

1/2 teaspoon freshly ground pepper

3 cloves garlic, minced

1 pound large shrimp, peeled and deveined

4 skewers

Cooking spray

4 cups hot cooked angel hair pasta (about 8 ounces uncooked pasta)

2 tablespoons fresh lemon juice

1 tablespoon chopped fresh parsley

Grated lemon rind (optional)

1. Combine Italian seasoning, paprika, lemon rind, salt, pepper and garlic in a medium bowl; stir well. Add shrimp; toss well to coat. Thread shrimp evenly onto each of 4 (8-inch) skewers.

2. Place kebabs on broiler pan coated with cooking spray; broil 2 minutes on each side, or until cooked through. Remove shrimp from skewers; arrange over pasta. Drizzle with lemon juice; sprinkle with parsley. Garnish with lemon rind, if desired.
