Baked Oysters with Parmesan
6 servings
30 fresh oysters in the shell
4 cups rock salt
1/3 cup freshly grated Parmesan cheese
1/3 cup dry bread crumbs
1 clove garlic, peeled and minced
1 tablespoon finely chopped parsley
2 tablespoons butter
Freshly ground black pepper to taste
1. Shuck oysters and leave on half-shell. Divide rock salt between two 9-by-13-inch baking pans; arrange oysters in pans.
2. Combine Parmesan, bread crumbs, garlic and parsley. Place about a teaspoon of the mixture on each oyster; dot with butter and sprinkle with pepper.
3. Bake in a preheated 475-degree oven for 8 to 10 minutes, or until bubbly and cooked through. Serve immediately.
