Light Recipe -- Lighthearted Fettuccine Alfredo

4 servings; approximate preparation time 15 minutes

1 cup low-fat cottage cheese

1/4 cup grated Parmesan cheese

1/4 cup low-fat milk

1/4 cup egg substitute

1 medium clove garlic, peeled and pressed

1/4 teaspoon nutmeg

1/4 teaspoon freshly ground black pepper

1/8- 1/4 teaspoon salt

1/2 pound fettuccine

1/4 cup chopped fresh basil or parsley

1. Bring a large pan of water to the boil for the pasta. In a food processor or blender process the cottage cheese until very smooth. Add the Parmesan, milk, egg substitute, garlic, nutmeg, pepper and salt. Process until very smooth.

2. Cook the fettuccine according to package directions in the boiling water. Drain and put back into the hot pan. Add the cheese sauce and place the pan over medium heat. Cook 1 minute, stirring constantly, until the sauce has thickened and coated the pasta.

3. Add the basil or parsley and serve.
