Quick Recipe -- Broiled Fish With Jerk Seasonings

BROILED FISH WITH JERK SEASONINGS 4 servings; 30 minute marination time
1 1/3 pounds fish fillets, such as true cod, rockfish or orange roughy
2 tablespoons lime juice
1 medium clove garlic, peeled and forced through a press
1 teaspoon Caribbean jerk seasoning (see note)
1/4 teaspoon salt
1 tablespoon butter or margarine
Lime wedges
1. Place the fish in a glass dish. Combine the lime juice and garlic; drizzle over the fish and refrigerate 30 minutes.
2. Place the fish on a broiling pan and sprinkle with the jerk seasoning and salt. Dot with the butter or margarine. Broil about 4 inches from the heat source 10-12 minutes per inch of thickness, or until the fish tests done and the internal temperature reaches 140 degrees.
3. Serve with lime wedges.
Note: To make your own jerk seasoning: Combine 2 teaspoons ground allspice, 2 teaspoons light brown sugar, 1 teaspoon ground nutmeg, 1 teaspoon ground cinnamon, 1 teaspoon dried thyme and 1 teaspoon ground black pepper. Store tightly covered in a glass jar.
