Baked Bronzed Fish

BAKED BRONZED FISH 4 servings; approximate preparation time 10 minutes
Seasoning mix:
1/2 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon dry mustard
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
Nonstick vegetable cooking spray
1 1/3 pounds fish fillets, such as rockfish, snapper or cod
Lemon wedges
1. Prepare the seasoning mix by combining the paprika, onion powder, dry mustard, garlic powder, cumin, oregano, salt and pepper.
2. Spray a baking pan or broiler pan with the nonstick cooking spray. Place the fish on the pan and spray the top of the fish. Sprinkle the seasoning mix over the fish, coating well.
3. Bake in a preheated 450-degree oven 12 minutes per inch of thickness, or until done and an internal temperature reaches 140 degrees on an instant read thermometer.
4. Serve with lemon wedges.
