Quick Recipe -- Hoisin Pork Stir-Fry

HOISIN PORK STIR-FRY 3 servings; approximate preparation time 20 minutes

2 tablespoons hoisin sauce

2 tablespoons ketchup

1 teaspoon soy sauce

2 teaspoons rice vinegar

2 tablespoons water

1 medium clove garlic, peeled and forced through a press

1/4 teaspoon dried red pepper flakes

1 ( 3/4-pound) pork tenderloin

3 teaspoons vegetable oil, divided

1 large red bell pepper, seeded and cut into thin slices

2 medium green onions, cut on the diagonal into 1/2-inch pieces

1. Combine the hoisin sauce, ketchup, soy sauce, rice vinegar, water, garlic and red pepper flakes.

2. Cut the pork into 1/2-inch slices; cut each slice into 3 chunks.

3. In a large heavy skillet or wok heat 1 teaspoon oil at a time over medium-high heat. Add half the pork and stir-fry about 1-2 minutes, or until the pork is just cooked through. Remove from the pan and cook the remaining pork, again using 1 teaspoon oil. Remove from the pan.

4. Heat the remaining teaspoon oil and stir-fry the red peppers 1 minute. Add the green onions, pork and sauce to the pan. Cook until the sauce thickens and coats the pork and vegetables, about 1-2 minutes. Serve with white rice.
