Greek Recipes -- Psari Plaki (Baked Fish With Raisins
Psari Plaki (Baked Fish With Raisins) 6 servings; approximate preparation time 20 minutes
1/8 teaspoon salt
Freshly ground black pepper to taste
2 pounds halibut or salmon fillet
1/4 cup olive oil
2 cups chopped celery, cut into 1/4-inch slices
6 large onions, cut into 1/2-inch slices
2/3 cup tomato sauce
2 tablespoons water
4 whole cloves
4 whole peppercorns
4 whole allspice
1 bay leaf
1 teaspoon dried basil, crushed
2 tablespoons finely chopped parsley
1/4 cup golden raisins
1/4 teaspoon salt
Lemon wedges for garnish
1. Lightly salt and pepper the halibut or salmon steaks. Set aside.
2. In a large skillet, combine oil, celery, onions and tomato sauce. Cover and simmer slowly 30 minutes, stirring frequently. Add water if onions appear dry.
3. Add cloves, peppercorns, allspice, bay leaf, basil, parsley, raisins and salt.
4. Place onion mixture in a large baking dish or a broiler pan. Bake uncovered in a preheated 350-degree oven for 30 minutes. Add more water if onion mixture appears too dry.
5. Place fish in a single layer on top of onions, and top fish with a little of the onion mixture. Return to oven and bake about 30 minutes, basting occasionally with pan juices, or until fish flakes when tested with a fork. Garnish with lemon wedges.
