Calcium Foods -- Stir-Fried Spinach With Ginger

The following recipe is from "Victory Garden Cookbook" by Marian Morash.
STIR-FRIED SPINACH WITH GINGER 4 servings; approximate preparation time 20 minutes
2 pounds fresh spinach
1 small onion
3 tablespoons peanut oil
1 clove garlic
2 slices ginger, each 1/8-inch thick
1/4 pound mushrooms, sliced
1 tablespoon dry sherry
1 1/2 tablespoons soy sauce
1 teaspoon sugar
Sesame seeds
1. Wash and trim spinach and cut leaves into wide strips (or tear into 2-inch squares). Chop onion.
2. Heat oil in a large frying pan or wok and add onion, garlic and ginger. Stir-fry on medium heat for 1 minute.
3. Add spinach and mushrooms; stir-fry for 3 minutes.
4. Add sherry, soy sauce and sugar; turn heat down to medium low, cover and cook 3 minutes longer.
5. Remove ginger and garlic, sprinkle with sesame seeds and serve immediately.
