Passover -- Sidney Burstein's Passover Matzo Meal Muffins

SIDNEY BURSTEIN'S PASSOVER MATZO MEAL MUFFINS 12 regular or 36 miniature muffins; approximate preparation time 20 minutes
1 cup water
1/2 cup margarine
1/2 teaspoon salt
1 cup unsalted matzo meal
5 eggs
1. Bring the water, margarine and salt to a boil in a heavy 2-quart saucepan, stirring to melt the butter.
2. Remove from the heat; immediately pour in all the matzo meal and stir with a wooden spoon to make a smooth paste. Add the eggs, one at a time, beating well after each addition.
3. Preheat the oven to 400 degrees. Grease the muffin cups (do not use paper baking cups). Fill the miniature cups with 1 tablespoon batter and regular muffin cups with about 1/4 cup batter. Bake 15 minutes for the miniature, 35 minutes for the regular. Turn out onto a rack, carefully loosening with a knife if necessary.
