Quick Entrees -- Ginger-Honey Salmon
Ginger-Honey Salmon 4 servings; approximate preparation time 10 minutes 3 tablespoons lemon juice
1 tablespoon honey
1 tablespoon finely grated fresh ginger
1 teaspoon light soy sauce
1 teaspoon minced fresh cilantro
1 1/3 pounds salmon fillet
1/8 teaspoon salt
Freshly ground black pepper to taste
1. Combine the lemon juice, honey, ginger, soy sauce and cilantro. Place the salmon on a baking pan and spread half of the honey mixture on top. Sprinkle with salt and pepper.
2. Bake in a preheated 450-degree oven 12 minutes per inch of thickness. Halfway through the cooking time spread with the remaining honey mixture. Test the fish for doneness; the internal temperature should be 140 degrees on an instant read thermometer.
