TERIYAKI BROCCOLI 4 servings; approximate preparation time 15 minutes
1 pound broccoli
1 tablespoon grated fresh ginger
1 tablespoon brown sugar
2 teaspoons soy sauce
1 teaspoon finely grated orange peel
Pinch hot red pepper flakes
1 teaspoon rice vinegar
3 tablespoons butter or margarine
Lime wedges
1. Cut the broccoli into florets. Peel the stems and cut on the diagonal into 1/4-inch slices.
2. In a small saucepan combine the ginger, brown sugar, soy sauce, grated orange peel, red pepper flakes, rice vinegar and butter. Place over medium-low heat until the butter has melted. Keep warm.
3. Steam the broccoli over boiling water until just tender, about 5-7 minutes. Drain the broccoli, shaking off the excess moisture; place in a bowl. Pour the teriyaki mixture over the broccoli and stir to coat. Squeeze lime over the broccoli and serve.
