Today: Cooking With Coffee -- Kona Coconut Muffins

THE FOLLOWING RECIPE IS FROM "COOKING WITH COFFEE" BY CAROL FOSTER. Kona Coconut Muffins 12 muffins; approximate preparation time 25 minutes

1/2 cup unsalted butter, room temperature

1/2 cup granulated sugar

1/2 cup lightly packed brown sugar

2 eggs

1 3/4 cups flour

1 tablespoon baking powder

1/4 teaspoon salt

1/2 cup brewed dark roast coffee, cooled slightly

1/3 cup milk

2 teaspoons vanilla extract

1/2 cup coarsely chopped walnuts

3/4 cup sweetened coconut

1. Grease and flour 12 muffin cups.

2. In a large bowl of an electric mixer cream the butter with the granulated sugar and brown sugar until light and fluffy. Beat in the eggs one at a time.

3. Sift together the flour, baking powder and salt. Combine the coffee, milk and vanilla. Alternately blend the coffee and flour mixtures into the creamed butter mixture. Stir in the walnuts and coconut.

4. Fill the muffin tins and bake in a preheated 375-degree oven until a toothpick inserted in the center comes out clean, 25-35 minutes. Cool briefly on a rack before unmolding.
