Cookbook Recipe -- Wali WA Ndengu (Lentil Pilau

THE FOLLOWING RECIPE IS FROM "AUTHENTIC AFRICAN COOKING" BY NJAMBI GISHURU. Wali Wa Ndengu (Lentil Pilau) 10 servings 1 1/2 cups lentils

3 cups water

1 1/2 cups basmati rice, rinsed

1/4 cup vegetable oil

1 large onion, peeled and chopped

4 cloves garlic, peeled and minced

2 medium tomatoes, peeled and chopped

1 tablespoon curry powder

1 teaspoon black pepper

3/4 teaspoon salt

1/2 cup hot water

1. Soak the lentils overnight. Rinse and place in a large pan. Add fresh water just to cover. Bring to a boil and cook until half the water is absorbed, about 10 minutes.

2. Add 3 cups water and the rice. Cook over medium-low heat until tender, about 15 minutes.

3. While the lentils and rice are cooking heat the oil in a skillet. Add the onion and garlic and fry over high heat until soft. Add the tomatoes, curry powder, pepper and salt. Cook until the tomatoes are soft.

4. Stir into the lentil mixture. If the mixture seems too dry add the 1/2 cup hot water and cook until the moisture is absorbed.
