Light Recipe -- Quark Vegetable Sandwich Spread

Quark Vegetable Sandwich Spread About 2 cups; approximate preparation time 10 minutes 1 1/2 cups quark (nonfat cheese)

1 small carrot, peeled and finely minced

1/2 small red bell pepper, seeded and finely minced

1 medium clove garlic, peeled and forced though a press

1 1/2 teaspoons dried dill weed

Pinch cayenne

2 tablespoons minced parsley

1 tablespoon lemon juice

1. Combine the quark, carrot, red bell pepper, garlic, dill, cayenne, parsley and lemon juice.

2. Use the spread on bread or toasted pita triangles.
