Light Recipe -- Asian Rockfish

ASIAN ROCKFISH 4 servings; approximate preparation time 10 minutes

1/4 cup bottled Asian-style gourmet sauce

2 tablespoons fresh lemon juice

2 teaspoons grated fresh ginger

1 clove garlic, peeled and minced

1/2 teaspoon hot curry powder

4 rockfish fillets

4 lemon wedges

1. Stir together the oriental sauce, lemon juice, ginger, garlic and curry powder. Place the fish on a broiling pan and spread some of the sauce over.

2. Broil about 2 inches from the heat source for 10 minutes. Check for doneness.

3. Squeeze a little of the lemon over each fillet before serving.

Microwave conversion: Combine the sauce ingredients and place the fish in a 12-inch square microwavable casserole. Spread with some of the sauce. Microwave, covered with wax paper, at 100 percent power for 4 minutes. Drain the liquid and spoon more of the sauce over the fish. Continue to microwave at 100 percent power for 2 to 3 minutes or until the fish is cooked through. Squeeze a little lemon over each piece of fish before serving.
